3/4 c mayonnaise
1 T curry powder
2 T water
1 whole chicken, roasted with lemon pepper, skinned, boned, and cut up
2 c apples, chopped
1 c celery, diced
1 bunch of green onions, diced
1/2 c dried apricots, diced, or raisins
1/2 tsp salt
Combine the mayonnaise, curry powder, and water to make the dressing. Stir in all the other ingredients, and chill. Makes about 6 cups of chicken salad.
