3 c turkey, cubed
1/3 c red onion, chopped
3 to 4 T black olive, sliced
2 to 3 T fresh snipped cilantro
4 oz cream cheese, softened
1/2 c mayonnaise
chipotle sauce to taste (this is hot so be careful)
Combine the dressing ingredients in a bowl and whisk together. Add the turkey, onion, black olive, and cilantro, and stir to combine. Add freshly ground pepper and salt to taste. This makes a wonderful lunch served on sandwiches or rolls, or on a bed of salad greens with a little grated cheese.
