One benefit of being home: back to juicing. By the way, 10 pounds of carrots makes 4 quarts of juice. Here’s what you do (I use organic produce):
10 lbs carrots
4 1-inch cubes of ginger root
Wash carrots and cut the top off. The green end is toxic. But no need to peel them. Slice lemons in half. Using a reamer, so no white pith gets in the juice, juice lemons one half at a time. Strain the juice of each lemon half into each quart jar.
Juice one apple plus one cube of ginger into a bowl. No need to core or peel. That juice goes into one quart with the lemon juice. The lemon juice keeps the apple juice from turning brown. If making 4 quarts all together, repeat three more times. The lemon + apple + ginger juice combo fills the quart jar almost 1/4 of the way full.
Now, juice the carrots. Add the carrot juice to each quart jar until full. Store in refrigerator.
When I was healing from cancer, I drank 2 quarts of carrot juice per day. When I am just trying to boost my immune system, I drink 1 quart of juice per day. If I am just maintaining, I drink 1/2 quart of juice per day.
