8 oz pasta noodles, cooked and well drained
1 head of garlic, roasted
1/2 c butter
2 c cream
1-1/4 c parmesan cheese
pepper to taste
Begin cooking the pasta according to package instructions. Melt the butter in a heavy skillet; add the roasted garlic and incorporate into the butter. Stir in cream and bring to a slow simmer. Begin stirring in the parmesan cheese, 1/2 c at a time, until melted and smooth – this will take 8 to 10 minutes. Add freshly ground pepper to taste. To make this a main dish rather than a side dish, add a rotisserie chicken, boned and cut up, to the pasta until heated through.
A combination of parmesan and mozarrella cheeses results in the most delicious, creamy sauce. We often only have parmesan, though.
Gluten restrictions: use Tinkyada brand brown rice pasta.
