Make the cookie crust, whipped cream, and chocolate ganache the day before. Beat together the peanut butter, cream cheese, and powdered sugar until completely smooth. Fold in 3 c of the whipped cream until well blended. Smooth the peanut butter layer to the edges of the pie. Gently warm the chocolate ganache until it is of an easily spreadable consistency. Spread evenly over the peanut butter layer, and chill thoroughly. Before serving, spread the remaining whipped cream over the pie.
